After years of experimenting with pork burgers, I'm giving up on them. Even after perfecting the technique, giving it a good crust yet keeping the insides juicy, trying different fat content, putting on ample cheese, they just don't deliver when you bite into them. Interestingly pork-beef mix is also the same, it's not better (even though I've seen videos on them, they called them butcher burgers)
Pork has many uses, burgers are not one of them.
Ate a big tasty (mcd) last night and it was awesome and the memory is still fresh.
Pan frying wasn't as good as I expected it to be, right now I'm more experienced and better on the grills directly

My buns are not properly toasted. I didn't prepare sauteed onions because I was rushing through it all. Had three types of meat for patties (going to ditch pork and pork mix so that complexity gone). I do too much meat at once (per kg) so I need to prepare a lot of buns which gets out of hand both in time and taking up a lot of space on the table. Basically autistic logistics stuff. Starting to value the idea of outdoor kitchens.
Autistic stuff.
Buns were fine, they just look a lil weird (they look desiccated because they are treated with alcohol in the factory and when that evaporates it looks like that)
